현대 식품 가공산업의 육성은 국내외적으로 그 필요성이 절실히 높아지고 있으며, 가공식품의 수요는 국민의 소득 증대, 아파트와 같은 주거 공간의 변화, 여성의 사회 참여 증대, 간편성 식품의 요구, 젊은 세대들의 식습관 변화 등이 요인으로 앞으로도 계속하여 늘어갈 전망이다. 또한, 사회가 발달함에 따라 식생활 양식도 변화를 거듭하고 있어 원료 그대로 생식을 하기 보다는 가공식품을 섭취하는 빈도가 날로 높아지고 있다. 소비자의 욕구도 맛과 영양가를 선호하는 경향에서 건강 지향적인 경향을 거쳐 기존의 모든 욕구를 충족하면서도 자연 그대로의 상태를 유지하는 신선한 제품을 원하는 방향으로 거듭 변화해가고 있다. 이러한 소비자의 욕구를 충족시키고 식품의 관능성과 저장성을 더욱더 향상하고자 식품 가공기술도 나날이 발전해왔는데, 기존의 가공법이 가지는 한계를 극복할 수 있는 새로운 가공기술들이 개발되고 있다. 식품의 저장 기간을 단축하는 대표적인 원인으로 효소에 의해 품질 저하와 미생물에 의한 부패를 들 수 있으며, 식품의 보존성을 향상하기 위하여 전통적으로 가열, 건조, 냉동 등의 물리적 방법이나 식품 보존제 첨가와 같은 화학적 방법을 사용했다. 그러나 가열 공정은 안정성을 확보할 수는 있으나 열에 의한 영양성분의 파괴, 질감 및 식품 외관 변화, 향기 성분의 손실 등 품질 저하를 피할 수 없으며, 냉동이나 건조의 방법은 장기간 저장하면 소비자 기호도를 감소시키며, 식품 보존제의 사용도 점점 감소하고 있다(1)(2). 이러한 한계를 극복할 수 있는 차세대 가공기술은 최소가공 (minimal processing) 또는 invisible processing)이 시선을 끌어왔다(3). 최소 가공법은 식품 본래의 신선한 품질을 가능한 한 그대로 유지하면서 안전하게 저장수명을 연장하는 가공 방법을 말하며, 최근 이에 따라 여러 가지 비열처리 기술(non-thermal process)이 활발히 연구되고 있다.참고 자료
