Absorption
Absorbed iron combine with transferrin (binds to ferric (+3) form of iron)
Iron can also be stored in another protein called “ferritin”
90% of the stored iron is reused many times.
Iron from animal sources (heme iron) much better absorbed than that from plant sources (non-heme iron)
Absorption of non-heme iron (plant sources) increased by:
- Vitamin C
- Meat in diet (MFP factor)
- Citric acid and lactic acid from foods
- HCl in the stomach
Dietary ferric iron is reduced to ferrous iron, which forms a soluble iron’s complex in the stomach.
